Orange almond biscotti!
Mandelbiscotti
2 st ägg
1,5 dl socker
100 gram sötmandel
3 dl vetemjöl
1 tsk vaniljsocker
1 tsk bakpulver
En nypa salt
Rivet skal från en apelsin (kan uteslutas)
Ca 200 gram mjölkchoklad att doppa i
1. Värm ugnen till 200 grader. Vispa ägg, vaniljsocker och socker vitt och poröst. Tillsätt rivet apelsinskal. Hacka mandeln grovt.
2. Blanda mjöl, bakpulver och salt i en annan skål. Häll i mjölet i smeten, lite i taget. Blanda i mandeln och rör till en jämn smet (den är ganska kletig).
3. Häll ut smeten på ett bakplåtspapper så att det bildar en längd (ca 10cm x 35cm) som är lite mindre än bakplåspappret. Vill du göra mindre kakor så gör två smalare längder. Grädda i ugnen ca 16-18 minuter.
4. Ta ut ur ugnen och låt svalna en stund. Sänk ugnsvärmen till 150 grader och skär längden på diagonalen i ca 1,5 cm tjocka skivor.
5. Vänd kakorna på plåten och grädda på ena sidan i 10 minuter. Ta ut plåten ur ugnen, vänd kakorna och grädda i ytterligare 10 minuter. Låt svalna.
6. Smält choklad i vattenbad. Doppa varje kaka så att chokladen täcker ungefär hälften. Förvara i en lufttät burk.

Every time I'm out for a coffee (I don't think there is a word for the Swedish word "fika") I choose to have an almond biscotti (preferably dipped in chocolate) with my coffee. Many people seem to find that strange, since there are so many other delicious pastries to choose from. But as I usually say, simplicity should not be underestimated! That is why it was about time I made my own biscotti, with orange of course. Wonderful!
Almond biscotti
2 eggs
1,5 deciliters sugar
100 grams almonds
3 deciliters flour
1 tsp vanilla sugar
1 tsk baking powder
A pinch of salt
Zest from one orange (optional)
About 200 grams milk chocolate for dipping
1. Preheat oven to 200 degrees C. Beat eggs, vanilla and sugar until white and fluffy. Add the orange zest. Chop almonds coarsely.
2. Mix flour, baking powder and salt in another bowl. Add the flour to the egg mixture and stir until smooth. Add the almonds (the mixture is pretty sticky).
3. Pour the batter on a baking sheet so it forms a log (about 35 cm long and 10 cm wide). If you wish to make smaller biscotti you can make two thinner logs. Bake for about 16-18 minutes.
4. Remove from oven and let cool. Lower the heat on the oven to 150 C and cut log into slices about 1,5 cm thick on the diagonal.
5. Turn the biscotti and bake for another 10 minutes. Remove from oven and turn slices over, and bake again for 10 minutes. Let cool.
6. Melt chocolate in a double boiler. Dip each slive in chocolate, covering half. Store in airtight container.

Coffee and nutella macarons!
Jag fick lust att prova något med kaffe, och tänkte att nutella och choklad kunde passa som fyllning. Jag använde mig av samma recept som förut och tillsatte en tesked espressopulver i smeten. Eftersom min mixer har gått sönder har jag använt en mandelkvarn för att mala mandeln. Jag tycker dock inte att den maler mandeln tillräckligt fint, så det blir väl till att inhandla en ny mixer. Riktigt goda var de iallafall!

I've become quite obsessed with macarons and I enjoy making them so much! It's kind of like a challenge every time, you never know how they will turn out! There are also so many flavours to choose from, and I want to try as many as possible in as little time as possible.
I felt like making something with coffee flavour, and I thought that a filling with nutella and chocolate would be the perfect match. I used the same recipe as last time and added 1 teaspoon espresso powder to the meringue. Since my mixer is broken I had to use an almond grinder which I think didn't grind the almonds fine enough. I guess I have to buy a new mixer. At least these macarons were very tasty!

After a break from both baking and blogging, I thought it was about time I made some cupcakes. I made some chocolate cupcakes with orange chocolate frosting, a combination which i love! I do feel like I need some inspiration on new flavours though. Do you have any favourite flavour combinations?

Chocolate cupcakes!
Receptet på cupcakes kommer (som vanligt) från Leila Lindholms "A Piece of Cake"
Chocolate cupcakes
Ingredienser
ca 12 st
-3 st ekologiska ägg
-2.5 dl strösocker
-1 tsk vaniljsocker
-50 g smör
-1 dl gräddfil
-2 msk kallt kaffe
-3.5 dl vetemjöl
-2 tsk bakpulver
-4 msk kakao av god kvalitet
-1 st nypa salt
-100 g mörk kvalitetschoklad 70 %
1. Sätt ugnen på 175 grader.
2. Vispa ägg, strösocker och vaniljsocker vitt och riktigt pösigt.
3. Smält smöret, häll i gräddfilen och kaffet och blanda det med äggsmeten.
4. Blanda vetemjöl, bakpulver, kakao och salt och vänd försiktigt ner det i smeten.
5. Hacka den mörka chokladen grovt och smält den i ett vattenbad (i en skål över kokande vatten).
6. Placera ut pappersformar i en muffinsplåt och fyll formarna till 2/3 med smet.
7. Grädda i mitten av ugnen i cirka 15 minuter. Låt svalna.
Vit choklad ganache frosting
Ingredienser
-200 g vit choklad
-3 dl grädde
1. Värm grädden i en kastrull, men låt den inte koka!
2. Hacka chokladen grovt och lägg i en skål.
3. Häll den varma grädden över chokladen och rör försiktigt tills chokladen smält.
4. Låt stå i kylskåp minst sex timmar.
5. Vispa (helst med elvisp) till önskad konsistens.

I had a small order on cupcakes yesterday. I used what I already had at home so I made chocolate cupcakes with nutella filling and white chocolate ganache frosting. I tasted one myself and I must say they were delicious! This is the first time I've succeeded doing ganache without ruining it. I think I usually whip to much but this time I was very careful.

-2.5 deciliters sugar
-1 teaspoon vanilla sugar
-50 grams butter
-1 deciliter sour cream
-2 tablespoons cold coffee
-3.5 deciliters all-purpose flour
-2 teaspoons baking powder
-4 tablespoons cocoa
-1 pinch of salt
-100 grams dark high quality chocolate 70 %
1. Preheat oven to 175°C.
2. Cream the eggs, sugar and vanilla until light and fluffy.
3. Melt the butter, add sour cream and coffee and then mix with the egg mixture.
4. Mix flour, baking powder, cocoa and salt in another bowl and then carefully fold in to the other mixture.
5. Chop the chocolate coarsely and melt it in a double boiler.
6. Pour batter into baking cups placed in a muffin pan, about 2/3 full.
7. Bake in the middle of the oven for about 15 minutes. Let cool.
White chocolate ganache frosting
Ingredients
-200 grams white chocolate
-3 deciliters heavy whipping cream
1. Heat the cream in a sauce pan, but don't let it boil!
2. Chop the chocolate coarsely and place in a bowl.
3. Pour the hot cream over the chocolate and stir until the chocolate has melted.
4. Refridgerate for at least 6 hours.
5. Mix (preferably with an electric mixer) until it reaches desired consistency.

Orange choc!
In English:
Since I love the combination of orange and chocolate I had to try to incorporate this into a cupcake. So I made an orange cupcake from Leilas recipe filled with pieces of nougat and a frosting made from orange, chocolate and cream cheese. I think they turned out delicious, especially the frosting! I also had to try out my new camera lens, which is absolutely amazing! I also bought a new cupcake stand at Panduro today, I couldn't help myself!
