The Cheesiest Salmon Mac'n Cheese Recipe

Hola Amigos! I love a good Mac'n Cheese and I love it even more with my favorite fish ever, Salmon! You could easily substitute the salmon  with hamburger, chicken, tuna or just have it plain! I just happened to get some salmon on sale and since it was just a little over half pound it wasn't going to be enough to feed us all as it.

So what makes this Mac'n Cheese the cheesiest? well how about 3 cups of cheese melted in a deliciously creamy Bechamel sauce and then baked to golden perfection! Did I mention that there is 3 kind of cheese too? yummm.

Perhaps this dish is not to have every week in fear of getting an expanding waste, but the days soon will be getting colder and mac'n cheese is the go to comfort food of excellence and loved by all!

You will love this recipe. It's one of those which taste even better the next day...if there're any leftovers.

The Cheesiest Salmon Mac'n Cheese
Ingredients:
10-12 ounces uncooked elbow noodles
2 Cups Milk
1/2 Cup Heavy Cream
3 TBSP Butter
1/4 Cup Flour
Salt, Pepper to taste
1 1/2 TBSP Seafood Seasoning and a little extra to sprinkle on top
2 Cups Queso Quesadilla
1 Cup Cheese Crumbs (Mine came with Cheddar, Mozzarella and Colby)
10-12 ounces cooked salmon (I used 8 ounces regular salmon and 4 ounces of smoked) 
green onions for garnish.
Directions:
Heat up your oven at 350 degrees
Cook your elbow noodles in salted boiling water until tender but not extremely soft. Al dente is what you are looking for. Drain, set aside.
In a saucepan prepare your Bechamel sauce by melting the butter. Once melted add flour, salt, pepper and seafood seasoning to create your roux. Slowly add your milk first whisking constantly to avoid lumps. Add the cream and cook on medium low heat for 10 minutes until thickened. Remove from heat.
Add your 2 cups of cheese to the Bechamel sauce. gently mix until the cheese is melted. 
Fold the noodles in this sauce. Don't break them.
Put some of the noodles in a baking dish, Top them with half a cup of your cheese crumbles, add more noodles and the rest of your crumbles. Sprinkle your noodles with as much as the seafood seasoning as you wish.
Place in the oven for 35 minutes until golden and bubbly! Listo, Serve and enjoy!

Prep Time 20 minutes                    Cooking  Time (in the oven) 30-35 minutes               Serves 6-8

Salmon Al Cartoccio Recipe

Salmon Al Cartoccio Recipe, a moist and succulent salmon baked in a bag of parchment paper so it retains all it's juices and nutritional value. Easy and Elegant!
Hola Amigos! I got a quick and elegant recipe for you today...oh yeah! Sometimes we get fully absorbed by our work, on being moms, cleaning ladies, cooks, gardeners and every other hat you wear, that we forget to treat ourselves to the simplest pleasures in life...a good cup of wine, a nice cappuccino, a good book or a nice meal.
With this recipe you can have it all! It's is extremely easy and has a nice ring to it (in my opinion anything Italian is sexy, lol) Al Cartoccio means nothing more than" in a bag" . In this case the salmon is cooked in a bag made out of parchment paper so it will keep all the good juices and taste delicious! Just wait till you try it!
Salmon Al Cartoccio

1 1/2-2 pd Salmon Filet
I Medium Red Onion,  diced
1 Green Bell Pepper, diced
1/2 Red Bell Pepper, diced
1 Tbsp Lemon Juice
1 Garlic Clove, finely chopped
Olive Oil
Salt, White Pepper to taste
For the Glaze
1/4 Cup Oyster Sauce
2 Tbsp Honey
1 tsp Lemon Juice
Heat your oven to 400 F. Line a cookie sheet with aluminum foil.On top of this place another sheet of parchment paper and  place your salmon on it (skin side down) . Season your salmon with salt, pepper and lemon juice on both sides, rub these in a little. Top your salmon with your chopped veggies and squirt a little bit of olive oil on everything. 

Now is time to close your "bag". Wrap your salmon with the parchment paper it was laying on. Once this is done, Wrap with the aluminum foil. The point is to keep your salmon locked in this little packet made with the papers. If you choose you can wrap yours only in parchment paper or only aluminum foil. If this is the case remember to oil the aluminum foil as well so your fish won't stick to it. I chose to use both because in my opinion the parchment paper will keep the moisture in  while the aluminum  foil will keep any juices from escaping in case of a leak in the inner bag.
Put your cookie sheet with the salmon in the oven for 20-25 minutes.
Mix all the ingredients for your glaze in a little bowl and have them ready to give your salmon the final touches.
 Remove from the oven and glaze it, put back in the oven, "bag" open this time for the glaze to caramelize for 5 more minutes. Remove and enjoy!

I love salmon, I think I have it every week, this is my favorite method of preparing it! 

Not only it's beautiful to the eyes once is done but you can taste every single vegetable you have put into it!
It's really a party in your mouth with every bite.

Salmon and Shrimp Burgers Recipe

Hola Amigos! Happy Monday. Summer is here to stay now! Yesterday we had a rather hot and humid 90 degree weather day. Ufff...it can't get a little too hot sometimes but it's all good because at night we had the most amazing Super Moon!!! Oh My Word!...what a beautiful sight it was! and if you allow me to say this, the first thought that crossed my mind was God is Good!
But back to our burger today, Grill Master " Big Boy" had friends over and he wanted to try something different for them, could you please get me some salmon burgers at the store? he said...so off the store I went, no pre made patties though, time to improvise with fresh wild caught salmon and why not...add some large raw shrimp into the mix. I've never done home made salmon burgers before and never for a hungry teen crowd, talk about pressure!!! There goes nothing, I said...and here are the results:

Salmon and Shrimp Hamburgers

1 1/2 Pounds Salmon, finely minced and skinned
12 oz Raw Large Shrimp, finely minced, save a couple for garnish
1 Cup Panko
1 TBSP Seafood Seasoning
1/3 Cup finely chopped trilogy (celery onion and bell peppers)
1tsps fresh grind ginger
1 clove garlic
salt and peper to taste (optional)
1 Large Egg beaten
1 tsps Lemon juice
1 TBSP Soy Sauce
Buns, lettuce, fixings of your preference (we prepared or "copy cat campfire mayo and our go to glaze) 
In a large bowl mix Minced Salmon, shrimp, panko, trilogy, ginger and garlic.Mix with your hands until all ingredients are fully combined. At this moment you may add salt of pepper if you choose to, I did not.
In a separate bowl, combine egg, soy sauce and lemon juice.
Add this mixture to the salmon and shrimp bowl, mix and at this point make your patties.
Oil your grill (very important), place your burgers and cook to desired doneness . 
As soon as your burgers are done, grill the saved shrimp for a couple of seconds and garnish each burger with one of them . 
Fix them to your liking 
Listo. 

I tell you friends I had to steal 2 burgers in order to take some pictures, because I think they were gone the minute they were out of the grill, teens can really devour food when they feel like it, lol

I figure either they were good or the kids were plain hungry!

But it turns out they were good! As a matter of fact, I even heard the "we gotta make these again"! Whoot Whoot! Victory!

I think I've a hit among the teen crowd and will keep them coming for more!
Not quite sure is a good idea for my wallet, but I love to see them happy and well fed as you can see they also ate all of their veggies without protesting!

The campfire sauce is so easy, just 1/2 cup Mayo, 3 TBSP  BBQ Sauce and  1 TBSP Relish, yumm!

Yes there is a bit more work involved than just buying the ready made patties, but I tell you is well worthy, fresher taste, quality ingredients and best of all a happy crowd.
