Hola Amigos! Glad to be here a the blog today sharing  with you my first "from scratch" muffins!
You know me, I'm still yet to conquer my fear of baking sweets from scratch, the flour, the baking powder, the not over mixing, it's all a big headache for me and I tend to avoid those at any cost! But once in a while, with deep breaths and fire extinguisher at hand, I get enough courage to try something simple and safe.

Perhaps one day I'll do something more daring, for now, these muffins are just what I need.

I think I fell I little more comfortable because it was one of my mom's  easy recipes, designs for her baking impaired daughter. If something was to go wrong on the first try, I could always call her and ask for help. I know you must be thinking how could I mess up muffins...believe me I Can!

They have  a little extra healthy crunch with the Flax, but that's about it..I even put some glaze over because to my hubs it is not a muffin if it doesn't have glaze...that sounds more like a cupcake to me..but I'm here to please.

Oatmeal Banana Muffins with Flax Seeds
Ingredients
3/4 Cup Oatmeal
3 Ripe Bananas, mashed
3/4 Cup Sugar
3 Eggs
3/4 Cup Butter or Margarine
1 tsp Salt
1/4 Cup Honey
2 Cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 -1 TBSP Flax Seeds
Directions:
Heat Up oven at 375 F and prepare your muffin pan with light oil . In a large bowl cream sugar and butter. Add eggs and mashed bananas, mix and add honey. 
In a separate bowl combine dry ingredients and add them slowly to the wet ingredients mix. Mix only till ingredients are moist and integrated, in other words avoid over mixing it. Pour the mix on your prepared muffin pan and bake for 18-20 minutes until a toothpick in the middle comes out clean! Remove from oven, let them cool and enjoy. 
Note: Glaze is not necessary, but if you want the extra touch of sweetness like the hubs did, these are the ingredients and directions for the glaze.
Glaze
1 1/4 Cup Confectioner's Sugar
1/4 Cup Butter, melted
1 tsp Clear Vanilla extract
2 TBSP Hot Water
Blend sugar and butter well. Add vanilla, stir. Add hot water until is smooth.If you want a thinner glaze add a little more hot water.

Prep Time 5 minutes                                Cook time 18-20 minutes                 Serves 12 muffins

Summer Berry Oatmeal Shake Recipe

Summer Berry Oatmeal Shake, a Delicious and Nutritious  On The Go breakfast shake for those mornings when we need to pack the kids and go!
Hola Amigos! Mornings are about to get quite hectic here and one way of making things easy in the morning is with a complete breakfast on the go if necessary or just to break the routine of the same kind of breakfast everyday.
Both my kids are picky eaters so I really have to try to pack the most amount of nutrients, good flavors in 1 bite (or drink) literally. It gets worse when the above description has to be the first in thing in the morning when let's face it, after months eating a bit late, no one is really hungry at 7 am.
This is my go to recipe, make it your own by changing the flavors of the fruit or oatmeal.
Summer Berry Oatmeal Shake getting to school on time could be tricky some mornings, send them of with this no cook, no sitting down, On The Go delicious and nutritious Oatmeal Shake!

The carnation breakfast drinks were recommended by my oldest's Pediatrician when he entered Jr, High and he still likes them. When we don't have any handy (rarely) he substitutes it with Protein Powder.

Now that my little one is ready to enter K, I'm sure he would enjoy the different flavor drinks mama can make him for his mornings, strawberries are his favorite!!!

Are you ready for this new school year yet? Are your kids already in school? This week I will try to make some of the meals my kids like before they go to school, when they come back and what I like to cook for supper when car pooling, car taxing and homework make time disappear in a blink of an eye! Always keeping in mind that food tastes better with a Pinch of Love!

Summer Berry Oatmeal Shake
Ingredients
1  Cup of Milk
1 Envelope of Carnation Breakfast French Vanilla
1 Container (2.46 oz) Instant Oatmeal, Processed* (or whatever instant oatmeal you have)
1 Cup Mix Berries (My garden gave me fresh blackberries, raspberries and a few strawberries)
1 tsps Sugar (optional)
*I put my oatmeal through a food processor or blender and pulse a couple of times for a smoother texture for my shake, this particular step is optional, my kids prefer it this way. 
Directions:
Add all ingredients and blend until smooth. 

Prep Time 5 minutes               Serves 2 (8 oz Cups)

Peach Crisp Pizza Recipe

Hola Amigos! Happy Wednesday! I just got the most delicious and juicy peaches at the store today. I couldn't help myself and just pictured them in my head as sweet crisps!...but, since I had the last of my little pizza crusts left, well...why not! So here goes nothing...(i promise after this one I won't torture you with another pizza recipe...well at least not for a while, lol)

Peach Crisp Pizza
1 Cinnamon Pizza Crust
1/2 Cup Mascarpone Cheese
1.2 tsp Vanilla Butter extract
Mix the Mascarpone cheese with the Vanilla Butter extrac and spread over the cinnamon crust.
For the Filling
2 Peaches peeled and cut in small cubes
1 TBSP Lemon Curd
3 TBSP Brown Sugar
1/4 Cup Apple Juice
1/2 tsps vanilla extract
1 tsps Flour
1 1/2 TBSP Raisins (optional)
Mix all these ingredients and place on an oven safe bowl and bake at 350F for 15-20 minutes. Remove and let it get cool to the touch.
Topping
Your favorite Granola
I make my own with 
1/2 Cup Quick oats
Raisins,
Shredded Coconut, 
Nuts
1/4 Cup Apple Juice
1 TBSP Honey
1 TBSP Brown sugar
1 tsps butter
Place your quick oats mix with raisins, nuts and shredded coconut on aluminum foil. In a microwave safe container, mix the rest of the ingredients and heat up for a few seconds. Stir until sugar is dissolved and spoon the mix over the oats. Bake at 275F for 20 minutes.
Assemble your pizza with the Mascarpone covered crust, then your peach filling and top it with your favorite granola mix.
Bake for 3 1/2 minutes at 400F.

For those of you thinking is not a pizza unless it has cheese...well there you go, vanilla buttery Mascarpone, binding together the sweet peach filling and the crispy granola

This little pizza is a masterpiece. You could eat the crust and the cheese all by themselves, the peach feeling is delicious by the spoonful and the granola...well...by the handful , put it all together and you go...yummm

Also this time I had to bring out the Ice Cream! Just watch it melt next to your warm pizza...and why not, dip your pizza in it too!

Middle Eastern Spiced Oatmeal Squares Recipe

Hola Amigos! What a beautiful weekend we had! Sunny, bright, a bit crisp, but that's O.K...just a little preview of what's ahead for us this coming Spring. I took advantage of the weather and went exploring around the city in search of exotic spices to create new dishes or give a new twist to good old favorites.
My exploring took me to a little Middle Eastern Market in the heart of the city...I almost past it because I had already spent more that I had planned  in a single place and in just spices..(they can get quite high now days), but I changed my mind and went in. I had only one thing in mind.Chocolate...I wanted to find something typical of the Middle Eastern Culture..and I did...I found quite a few variety of candies, not exactly what I had in mind. Until I talked to this gentleman who at first was kind of puzzled (or annoyed) by my request of chocolate from the region..
Why? he asked...well...I'm looking for different notes, tastes and spices in the chocolate...I proceeded to explain the differences between chocolates and cocoas depending on the regions or countries...well, you know the deal...that warmed him a little bit and he started telling me that what he knew was spices...and then ...he got on the phone, told me to wait a second, wrote some things down and said...Come with me...and I'm thinking Oh boy, what did I do now???
He went to were the spices where...took a little bag and started mixing all sorts of things...to fast for me to follow..he was a man on a mission, when he was done..he smelled the bag...told me to smell it..and oh....all I could say was Divine!!!!...I can't even describe it now...sweet, flowery, bitter, spicy...all in one little bag...You want more??? he said...Yes, please...but let me write down what you are putting there so I would remember next time...Don't worry he said...I'll remember...

After he was done...he gave me a recipe of some oatmeal treats with almond butter, butter, brown sugar and the mystery ingredients...that was the kind of treat he liked to eat..not too sweet, more on the nutty crunchy side. He told me only a few of the ingredients on the mystery bag, he kept one or two as his secret...because he said..I will be back...I think he was right...I'm hooked on whatever was in it! Here is His recipe.

Middle Eastern Spiced Oatmeal Squares

3 cups Oatmeal
1  1/2 Stick of butter 
1/2 Cup Brown Sugar
3/4 Cup Almond Butter 
1 Cup Semi-Sweet Chocolate Chips
2 TSPS Mystery Spice Bag
(what I know was on the bag, so you can make your own, ginger,  black pepper, coriander, cinnamon, nutmeg, anise)

In a heavy saucepan melt butter and sugar add the oatmeal and cook for about 3 minutes. Remove from heat. Add half this mix into a greased medium baking dish (I used a 9x9) to form a crust. Save the other half for topping. 
Melt the chocolate chips and add the almond butter, vanilla and spices. Once all is mixed, remove from heat and   distribute gently with a knife over the previously made crust and top it with the other half of the oatmeal mix. Pressing down on the chocolate. Refrigerate overnight.

 I tried to modify or translate in Recipe fashion what this kind gentleman told me, I think I got it right and they are simply delicious.

As he said, not too sweet, very crunchy and nutty flavored, but the background of all those spices stays in your mouth with every bite and beyond.

I find it is perfect for breakfast, he even told me to have it with natural yogurt and honey...

Or with cinnamon tea

However you choose to have these treats, you will enjoy every bite.
