Pannkakor

2½ dl vetemjöl
½ tsk salt
2½tsk bakpulver (valfritt, för fluffigare pannkakor)
2 tsk vaniljsocker
6 dl mjölk
3 ägg
2 msk smör
Blanda mjöl, bakpulver och salt i en bunke. Vispa i hälften av mjölken och vispa till en jämn smet. Tillsätt ägg, vaniljsocker, smält smör och resten av mjölken. Smält en klick smör i en varm stekpanna. Häll 1/2-1 deciliter smet i stekpannan, beroende på hur tjocka pannkakor du vill ha. Servera med t.ex. vispad grädde, färska jordgubbar och en klick jordgubbsylt.

Today I made som pancakes for lunch. I usually make Swedish or American pancakes, but the Swedish pancakes don't make me feel full enough and the American make me feel too full. So I made something inbetween and added some baking powder in my usual pancake recipe. The pancakes turned out perfect, fluffy and easy to fry.
Pancakes
Makes enough for 2
2½ deciliters all purpose flour
½ tsp salt
2½ tsp baking powder (optional)
2 tsp vanilla sugar
6 deciliters milk
3 eggs
2 tbsp butter
Mix flour, baking powder and salt in a bowl. Add half of the milk and mix until smooth. Add the eggs, vanilla, melted butter and the remaining milk. Melt some butter in a hot frying pan. Pour 1/2-1 deciliter of the batter in the pan depending on how thick you want your pancakes. Serve with whipped cream, fresh strawberries and strawberry jam.
