The Reliable Dip
Avocadoes galore at present. Aren't I in an enviable position? They cost about $2each in the shops at the moment which is damn expensive. Gosh these fruit trees can save a heap of money sometimes.
When the snacking niggles come on and there is nothing to snack on, an avocado comes in handy. They are perfect freshly sliced onto a piece of toast, bread or cracker, sprinkled with cracked black pepper, sea salt and lemon juice.
If I have a couple of minutes up my sleeve, and I literally mean a couple of minutes, an avocado can quickly be transformed into a luscious dip. Perfect with pita crisps, chips or crackers, freshly cut up veggies, cheese, etc, it is always reliable and delicious. Everyone in my family loves it.
There is always garlic in my kitchen, lemons or limes on my trees, and so very little else is needed to whip up a tasty and healthy treat. I know there are so many versions for "guacamole". Here is mine.
Avocado Dip
1 avocado
1/4 cup sour cream, lite is fine
1 large or 2 small cloves finely crushed garlic
1tbsp lemon or lime juice
a small sprinkle of freshly cracked pepper
approx. 1/2 tsp crushed Maldon sea salt flakes
1tsp sweet chilli sauce or to taste
Peel the avocado; place into a bowl with some lemon juice to prevent from browning; mash with a fork. Mash to desired consistency, (I like a little texture so not too mushy).
Add remaining ingredients; mix well; taste; adjust seasoning, lemon juice or chilli if desired. Voila!
